Steps to Prepare the Dough for Shaping
Step 1 – Place the Bread Dough on the Counter Gently
Place the bread dough on the counter gently to try to preserve some of the air pockets you created.
Step 2 – Place the Smooth Side Down
Choose the pretty side and put it down on the side touching the counter. This will make sure that the top of your loaf will be smooth and even.
Step 3 – Pat the Dough to Make it Even
Pat it into a 1 inch thick disk or rectangle. It doesn’t have to be even or perfect. We are flattening it enough to work with it.

Step 4 – Fold the Bottom Inch Over onto Itself
Fold the bottom inch over onto itself. Get out all the air, because air pockets lead to holes inside the bread slices.
Step 5 – Begin to Roll
Grab the folded edge and roll it over once. Make sure to remove as much air as possible as you roll!

Step 6 – Pull as you Roll
Pull the edge towards you until you can see the dough stretch just a little.
Step 7 – Roll and Stretch
Repeat Step 5 (roll) and 6 (stretch) until you get to the other end of the bread dough.

Step 8 – Rotate the Dough Log
Take your bread log and rotate it so that it is vertical.


Step 9 -Tuck the Ends Under
Grab the ends of the bread loaf and tuck them under. This creates a beautiful end that doesn’t have the distinctive swirl pattern. It makes it look more professional.

Steps to Seal the Bottom Seams
Step 10 – Push to the Left
Place your right hand on the counter or board at a 45 degree angle and push the dough. The dough should be becoming more tight on top.

Step 11 – Push to the Right
Place your left hand on the counter or board at a 45 degree angle and repeat the pushing process.
You need to keep the seam on the bottom. the goal is to seal the seam and many new bread makers just roll the dough around on the counter, which is not helpful.

Step 12 – Finish Sealing the Seams
Pass the dough back and forth doing the 45 degree push between your hands a few times. When you flip the bread over you will notice that the seams are much smaller. That means it is ready for the loaf pan.

Step 13 – Place in Baking Dish
Your loaf has been shaped. If you like how it looks then use your two hands to place the loaf into the loaf pan for baking.
If your loaf isn’t quite right, you can let it rest 10-20 minutes and then shape the loaf over again.
Tips for Success to Shape Bread Dough for a Loaf Pan
Avoid using flour during shaping. I recommend using water, oil, or just a clean counter top depending on how sticky your bread is. If you really feel you need flour use only enough to lightly dust your hands and the ball of dough.
Flour gets into your loaf and too much flour will prevent the loaf from sticking to itself during shaping.
Keep the seam of the bread on the counter as much as possible when pushing. New bakers tend to let the bread roll. THAT WILL NOT SEAL THE SEAM. Keep the seam on the bottom and push it side to side on the counter to seal the seam. The seam above is as loose as I accept.
You do not have to seal the seam completely. You can seal the seam completely, but the amount of seam I left is typically enough for my dough to look pretty and rise well.
