So Simple and Versatile!

This recipe is one of my go to recipes when I have no plan for breakfast the following day. I love that I can prepare it the night before and leave it in the fridge with a sticky note with cooking directions for my family.

This recipe can use anything you have in your kitchen. You can use any spices, any fruit, and any type of bread.

I use this recipe throughout the year and change it based on the season. In the fall, I add pumpkin and apples. In the spring and summer, I add berries. If it sounds good, then throw it in the bowl!

Do I Really Need a Temperature Thermometer?

Yes, I think you do really need to invest in one! I like this instant read thermometer.

Having an instant read thermometer in your kitchen helps you be a more confident baker and chef. You can temperature check ANY food to make sure it is perfectly done!

I love using it for bread, eggs, and chicken. It helps me be more confident in the kitchen because I know that everything I serve is cooked sufficiently.

Ingredients and Substitutions for French Toast Casserole

Bread – Fresh or Stale – I like to freeze a loaf of bread cubed up so that I can make this recipe super fast. You could also have a bag of cubed bread in your freezer that you add to as you have ends or stale pieces and then bake a casserole once the bag is full.

Seasonings – Think about the seasonings you like with the fruit you prepared. I really like cinnamon and nutmeg with almost anything.

Salt – Any salt will work well in this recipe!

Eggs – I use chicken eggs, but you could substitute any egg. Try to match the number of substitute eggs to the size of a chicken egg.

Milk – You can use any milk you like in this recipe. We have used oat milk and whole milk. Both turned out delicious!

Fruit – Whatever fruit is floating around your freezer or counters is great for this recipe! Whatever fruit sounds good to you would go great in this recipe.

Nuts or Seeds – I love adding pecans and my husband loves cashews, so we use both. Sunflower seeds are also a popular add in!

Sample Baking Schedule for French Toast Casserole

My typical baking schedule for French toast casserole is pretty simple!

Mix all the ingredients up the night before and place into a buttered pan.

Place the pan into the fridge with a sticky note on top of it with the baking temperature and time.

Let all my family members know that it needs to go in the oven, and whoever wakes earliest gets it in the oven!

Bake in the morning and enjoy for breakfast!

How To Store Leftovers

When we have leftovers of French toast casserole, I store it in the pan I baked it in. I store it in the fridge, and we eat it for breakfast until it is gone. Eat it up during the week!

Can I Freeze French Toast Cassrole?

Yes! Once it is baked, you can freeze the pieces. They can be thawed overnight and reheated in the oven or microwave!

  • 1 9×13 inch Pan greased
  • 1 Large Bowl
  • 1 Medium Bowl
  • 1 Large Spoon
  • 1 Set of Measuring Cups
  • 1 Set of Measuring Spoons
  • 1 Temperature Thermometer

Ingredients
  

  • 1 Bread Loaf cubed
  • 2½ – 3½ Cups Milk any alternatives work too
  • 12 Eggs
  • 3 Tablespoon Cinnamon optional
  • 1 Tablespoon Nutmeg optional
  • ½ Cup Sugar optional
  • 1 teaspoon Salt
  • 2-3 Cups Fruit
  • 1 Cups Nuts or Seeds optional

Toppings

  • Maple Syrup optional
  • Powdered Sugar optional
  • Whipped Cream optional
  • Extra Fruit optional
  • Extra Nuts optional

Instructions
 

  • Put the cubed loaf of bread into a big bowl.
  • Add the spices and mix into the bread. Taste the bread to see if you want to add more spices. Once the spices are to your liking, set aside.
  • In the separate bowl, mix together the eggs and milk.
  • Pour the milk and egg mix on top of the bread cubes. Mix gently to let the bread soak up all the milk mix. Let it sit in the bowl for 15 minutes covered.
  • If there is no milk mix at the bottom of the bowl, add another 1/2 cup milk.
  • Add the fruit, nuts, and seeds and mix well.
  • Grease your 9×13 pan, dump in the French toast casserole ingredients.
  • Cover the pan and label the top with baking instructions if you plan to bake it in the morning. In the morning, place the pan into the cold oven and bake at 375℉ (190℃). Bake for an hour or until the middle reads 165℉ (74℃) on a thermometer.
  • If you wish to bake immediately, Preheat your oven to 375℉ (190℃). Bake for 45 minutes or until the middle reads 165℉ (74℃) on a thermometer.
  • Serve warm with any topping ideas listed in the ingredients.

Notes

If you would like to make a half batch you can halve all the ingredients and bake in an 8×8 in pan. If you would like to double it I would make it in a roasting pan.
You could also bake it in multiple loaf pans and freeze the loaves for smaller portion sizes. 
Any fruit that you like baked works well in this recipe! We change it up seasonally with pumpkin, apples, berries, and more when the fruit is in season. 
You can use any sweetener you like and add as much or as little as you like! I tend to not add any sweetener because I know we will eat it with maple syrup. I added the sweetener here incase you are eating it plain.
